Ingredients

  • 60g Sun & Spice Desiccated Coconut
  • 2 tbsp Sun & Spice Coconut Sugar
  • 150g rolled oats
  • 120g almond butter or peanut butter
  • 80g honey
  • 50g dark chocolate chips
  • 1 tsp vanilla extract
  • Pinch of salt

Method

  1. Combine the rolled oats, 40g of Desiccated Coconut, Coconut Sugar, chocolate chips, and salt in a large bowl.
  2. Add the almond butter, honey, and vanilla extract. Stir until everything is well combined and the mixture holds together when pressed.
  3. If the mixture is too dry, add a teaspoon more honey. If too wet, add a tablespoon more oats.
  4. Roll the mixture into 12 even-sized balls using slightly damp hands to prevent sticking.
  5. Spread the remaining 20g of desiccated coconut on a plate. Roll each ball in the coconut until evenly coated.
  6. Place on a tray lined with baking paper and refrigerate for at least 30 minutes to firm up.
