Ingredients
- 60g Sun & Spice Desiccated Coconut
- 2 tbsp Sun & Spice Coconut Sugar
- 150g rolled oats
- 120g almond butter or peanut butter
- 80g honey
- 50g dark chocolate chips
- 1 tsp vanilla extract
- Pinch of salt

Method
- Combine the rolled oats, 40g of Desiccated Coconut, Coconut Sugar, chocolate chips, and salt in a large bowl.
- Add the almond butter, honey, and vanilla extract. Stir until everything is well combined and the mixture holds together when pressed.
- If the mixture is too dry, add a teaspoon more honey. If too wet, add a tablespoon more oats.
- Roll the mixture into 12 even-sized balls using slightly damp hands to prevent sticking.
- Spread the remaining 20g of desiccated coconut on a plate. Roll each ball in the coconut until evenly coated.
- Place on a tray lined with baking paper and refrigerate for at least 30 minutes to firm up.

- The desiccated coconut coating gives each ball a lovely texture and prevents them from sticking together during storage.
- Coconut sugar adds a subtle caramel sweetness without the sharp sugar spike.
