Ingredients

  • 4 Sun & Spice Cardamom Pods, lightly crushed
  • 0.5 tsp Sun & Spice Ceylon Cinnamon
  • 2 cups whole milk
  • 1 cup water
  • 2 black tea bags or 2 tsp loose leaf black tea
  • 2 tsp honey or sugar
  • 2 whole cloves
  • 1 small piece fresh ginger, sliced

Method

  1. Lightly crush the Cardamom Pods with the flat side of a knife to crack them open and release the seeds.
  2. In a small saucepan, combine the water, cardamom pods, Ceylon Cinnamon, cloves, and sliced ginger. Bring to the boil, then reduce heat and simmer for 5 minutes.
  3. Add the tea bags or loose tea and let it steep for 2 minutes. The liquid should become dark and intensely aromatic.
  4. Pour in the milk and bring to a gentle simmer. Do not let it boil vigorously.
  5. Remove from the heat, stir in the honey or sugar, and strain into two mugs through a fine sieve.
  6. For a frothy finish, use a milk frother or whisk vigorously before pouring.
