Ingredients
- 4 Sun & Spice Cardamom Pods, lightly crushed
- 0.5 tsp Sun & Spice Ceylon Cinnamon
- 2 cups whole milk
- 1 cup water
- 2 black tea bags or 2 tsp loose leaf black tea
- 2 tsp honey or sugar
- 2 whole cloves
- 1 small piece fresh ginger, sliced

Method
- Lightly crush the Cardamom Pods with the flat side of a knife to crack them open and release the seeds.
- In a small saucepan, combine the water, cardamom pods, Ceylon Cinnamon, cloves, and sliced ginger. Bring to the boil, then reduce heat and simmer for 5 minutes.
- Add the tea bags or loose tea and let it steep for 2 minutes. The liquid should become dark and intensely aromatic.
- Pour in the milk and bring to a gentle simmer. Do not let it boil vigorously.
- Remove from the heat, stir in the honey or sugar, and strain into two mugs through a fine sieve.
- For a frothy finish, use a milk frother or whisk vigorously before pouring.
Tips

- Crushing the cardamom pods rather than grinding them gives a more complex, layered flavour that infuses beautifully into the milk.
- Adjust the tea strength by steeping longer or shorter. Two minutes gives a balanced, not-too-bitter brew.
- For a vegan version, use oat milk which froths well and adds natural sweetness.
Serving Suggestions

Serve piping hot in your favourite mug. This chai pairs wonderfully with biscuits, shortbread, or a slice of cinnamon banana bread for an afternoon treat.
